Chicken, Spinach and Artichoke Mac & Cheese
Inspired by the classic pub dip, this mac and cheese is addictively delicious.

lb (500 g) lean ground chicken
pkg Hamburger HelperTM Cheesy Shells
tbsp (30 mL) vegetable oil
cups (500 mL) hot water
jar (375 mL) marinated artichoke hearts, drained and chopped
cups (1 L) baby spinach, loosely packed
cup (125 mL) grated Parmesan cheese
green onions, finely sliced
Heat oil in large skillet set over medium-high heat; cook chicken and garlic for 4 to 5 minutes or until chicken starts to brown.
Stir in milk, hot water, sauce mix and uncooked pasta (from Hamburger HelperTM pkg), and artichokes; bring to boil, stirring occasionally.
Reduce heat; cover and simmer, stirring occasionally, for about 10 minutes or until pasta is tender.
Remove from heat. Stir in spinach. Transfer to a baking dish. Sprinkle with Parmesan cheese; broil for 2 to 3 minutes or until golden brown. Sprinkle with green onions.
