Tuscan Chicken Noodle Skillet

The classic Tuscan pairing of white beans and kale makes a hearty and healthy family meal.

Ingredients

tbsp (30 mL) olive oil

lb (500 g) lean ground chicken

can (19 oz) white beans, drained and rinsed

cloves garlic, minced

tsp (1 mL) pepper

cups (875 mL) hot water

pkg Hamburger HelperTM Italian Herb
3
cups (750 mL) finely sliced kale
1
tomato, diced

Preparation

  1. Heat oil in large skillet set over medium heat. Cook chicken for about 6 to 7 minutes or until it starts to brown. Add beans, garlic and pepper and cook for 1 minute longer or until heated through.
  2. Stir in water, sauce mix and uncooked pasta (from Hamburger HelperTM box). Heat to boiling, stirring occasionally.
  3. Reduce heat, cover and simmer about 13 minutes, stirring occasionally until pasta is tender.
  4. Stir in kale and tomato; remove from heat. Let stand, covered, for about 5 minutes to allow sauce to thicken.
