Squash Noodle Skillet

With both winter and summer squash and a cheesy topping, this easy noodle is sure to please a crowd.

Ingredients

lb (500 g) ground beef

onion, chopped

clove garlic, minced

cups (500 mL) chopped butternut squash

zucchini, chopped

cups (425 mL) milk

cups (425 mL) hot water

pkg Hamburger HelperTM Cheesy Italian

cup (250 mL) ricotta cheese
1
cup (250 mL) shredded mozzarella cheese

tbsp (30 mL) finely chopped fresh basil (optional)

Preparation

  1. Preheat broiler to high. Heat a large nonstick skillet set over medium-high heat. Cook ground beef, onion and garlic for 5 minutes or until beef starts to brown. Stir in butternut squash. Cook for 2 minutes or until squash starts to soften.
  2. Stir in milk, water, sauce mix and uncooked pasta (from Hamburger HelperTM box). Heat to boiling, stirring occasionally.
  3. Reduce heat, cover and simmer for about 5 minutes. Stir in zucchini; cover and simmer, stirring occasionally, for 8 minutes or until pasta is tender.
  4. Remove from heat. Stir in ricotta cheese. Sprinkle mozzarella over top. Broil for 1 to 2 minutes or until cheese starts to melt and bubble. Sprinkle with basil, if using.
